SUBSTITUTIONS + FAQs:
What substitutions can be made?
Vegetables – You can add any veggies you like. This recipe calls for red and green peppers but I have certainly had lasagna before where some of the main ingredients were spinach and mushrooms. Feel free to get creative here.
Pasta Sauce – Making your own sauce is an option or looking for sauces that are low in carbs can help with dietary restrictions like on the Keto diet, for example. Another idea is to purchase a good sauce and simmer it on low heat while adding your preferred spices. Once combined, add it to the recipe.
Lasagna Noodles – They make gluten free, whole wheat, and no-bake noodles. I prefer boiling my own noodles and glazing them with olive oil just before laying them in the baking dish.
Meat – While this recipe is meatless, you can always customize according to your tastebuds. I have absolutely made this and other pasta with ground beef, andouille sausage, chicken, and more. Again, do what works for you and the people who will be consuming the dish.
How did you pick the cheeses?
So I chose between four of my favorite shredded cheeses and opted not to use Parmesan because I had plans of shaving it over the garlic bread. You can choose any cheese that you like, including vegan cheeses, like the Shredded Daiya Mozzarella. For alternative cheeses, consider adding dry seasoning to the cheese for an extra boost of flavor.
Also, just because I’m not a fan of ricotta cheese, it does not mean you cannot adjust this recipe if needed. It will still be delicious!
Did the lasagna fall a part?
No! But I would recommend letting the lasagna sit, uninterrupted, anywhere from 15-30 minutes after pulling it out of the oven. This will allow everything to set and prevent it from sliding around when you try to cut it.
Can this be frozen?
I don’t see why not. Although this never lasts in my house lol! Best guess would be to freeze up to 3 months.

This recipe is perfect as is, but feel free to customize it and make it your own.
